Spruce's Sweet Indulgence

Do you have a sweet tooth? Come and learn how to incorporate
chocolate into some sweet and savory cooking! Watch as we create
a spicy beef and pork chilli, a rich white and milk chocolate candy
bar garnished with freshly made honeycomb. Then, you’ll learn how
to make a classic (with a twist), deconstructed lemon meringue pie.
Haven’t completely satisfied the sweet tooth? We’ll finish the
evening with chocolate ganache made from scratch!

ITALY + PASTA. Enough Said.

Do you love pasta? So do we! Join us for a fresh pasta filled evening
with one of Spruce on Wellington’s Chefs who will show you how to
make fresh spinach infused fettuccine with classic beef bolognaise.
Then it’s all hands-on deck to prepare your own pappardelle pasta,
paired with a scratch made tomato sauce. We will top off the class
with our own unique take on a sweet Italian classic – tiramisu.

Mmm mmm Good

Rainy days call for soul warming eats! Learn how to make Chef
Thomas’ signature potato and leek vichyssoise, garnished with fresh
chive oil and smoked sea salt. We will then dive into a classic
charred tomato bisque with old cheddar grilled cheese crackers, and
we’ll finish the evening with a sweet melon gazpacho with mint
infused syrup. To put your new soup making skills to use at home,
you’ll receive a bottle of our house made chive oil.

For The Love Of The Sea

If you love fish as much as we do, this class is for you! We will show
you how to clean and properly sear a scallop and pair it with a sweet
pea puree, lemon beurre blanc and herb crumb. Then, using our
signature house smoked Manitoulin trout, we’ll demonstrate how to
properly cure and smoke a fillet. Finally, you will learn how to clean
and cook fresh mussels and customize your own delicious flavour.
Each guest will receive a piece of Spruce on Wellington’s signature
smoked trout to take home as well!

Brunch Is Best!

If you love brunch, then you won’t want to miss this class! Chef Thomas will show you some of Spruce on Wellington’s signature brunch items, such as our hen egg benedict with sabayon hollandaise, and our crushed avocado and spinach on buttered toast, where you will learn how to cook the perfect poached egg. To finish, we’ll indulge in a fresh fruit parfait with candied nut granola and spiced yogurt. Each guest will receive a bag of Spruce on Wellington’s house made granola to enjoy at home!
