For The Love Of The Sea

If you love fish as much as we do, this class is for you! We will show
you how to clean and properly sear a scallop and pair it with a sweet
pea puree, lemon beurre blanc and herb crumb. Then, using our
signature house smoked Manitoulin trout, we’ll demonstrate how to
properly cure and smoke a fillet. Finally, you will learn how to clean
and cook fresh mussels and customize your own delicious flavour.
Each guest will receive a piece of Spruce on Wellington’s signature
smoked trout to take home as well!
